Lashbears Uber Crunchy Oven Baked Drumsticks.
These are Tender & Succulent as anything, but are quite healthy !! (well, a bit of chicken skin, but who's counting?)
2 cups cornflake crumbs (Or Japanese Panko)
1/2 cup grated Parmesan (the dry powdery type)
2 teaspoons salt
1/2 teaspoon ground cayenne pepper
2 eggs
12 chicken drumsticks
Preheat oven to 325F.
Line a shallow roasting pan with aluminum foil. Coat with nonstick vegetable oil cooking spray.
Mix together cornflake crumbs, Parmesan, salt and cayenne pepper in large bowl. Lightly beat eggs in shallow glass dish.
Peel back the skin on each drumstick. Dip each chicken drumstick in egg; roll in cornflake crumbs to coat.
Roll the skin over the coating, then repeat Dip each chicken drumstick in egg; roll in cornflake crumbs to coat. Place on prepared pans.
Lightly coat chicken with nonstick vegetable-oil cooking spray.
Bake without turning, for 1 hour.

I don't know how they make it, but it's SOOOO much crunchier than regular breadcrumbs. *Oishii Desu* !!!

I think I will try this out and use Spam instead of chicken. I will serve it over some rice

I thought it was because panko includes more sugar which aids in carmelizing and crunch. In the process of trying to confirm that I found this New York Times article (http://query.nytimes.com/gst/fullpage.html?res=9D04E7DC153FF933A05751C1A96E9582 60) about panko. A lot of detail (not only is there sweetener, Japanese-style white break apparently crumbles differently) in there.

The words "Spam" and "crunchy" should never be used in the same recipe....;)

Great article, Alex. Thanks !!
I always thought Panko looked like it was shredded from the loaf with a rotating drum of pins (think a large music-box drum)

Over rice, I would go a light sweet and sour sauce !
With mashed potato and biscuits, I would make a country sausage gravy (of course....)

No taste for Hot Stuff, BDB? I like the chicken to have a little kick to it - it you're a beginner to hot things, a quarter teaspoon or even a pinch would do.

No not at all. I have no sense of smell and it screws with my tastebuds. Spices like that have no flavor to me...it just burns my tongue and it is painful to me. It's hard to explain without you walking a mile in my shoes than you could experience it for yourself. It probably makes no sense otherwise.

Then you're not a bird !! Birds can't sense the stuff that makes peppers hot, so they just eat them like candy and spread the seeds around in their poop.
Fascinating stuff, science.
So to substitute, I would add a little tarragon to the crumbs instead. :D
