We had roast chicken and veggies last night. I cut up extra veggies and roasted them in the pan juices afterwards. They are gong to make Roasted Vegetable Soup tonight.

I have only been cooking lunch (trying not to eat after dark on weekdays) yesterday I made chicken noodles with green chili and roasted veggies. It was a rain day so comfort food was in order.

Last night was supposed to be pork tenderloin with potatoes, salad and rolls. I browned it on the stove and finished it in the oven - even took the temperature. Let it rest.

Called everyone to dinner and went to cut it and thought it didn't look/feel quite right. Cut a piece of the end and not nearly done inside. WTF? Apparently I read the thermometer wrong or something. So I put it back in the oven and we started with salad... and eventually just couldn't wait and ate the rolls and potatoes.

The meat was finally done about 10 minutes later - when no one was really that hungry anymore.

I did eat the little piece off the end though and it was soooooo tasty!

So - tonight we are having some sort of pork tenderloin. I hate to call it leftovers.

Smoky Tomato-Bacon Soup

Very easy and turned out really good. And at 170 calories/serving it's not too bad for you either.
