Tonight it's going to be baked chicken and potatoes with garlic and rosemary with some sort of veg... carrots probably. The rosemary in my garden has growing fresh sprouts and they're just begging to be tasted.

Last week, I made my first ever meatloaf from scratch. (How did a bachelor like me get this old without ever having done this!?) I used crushed garlic croutons instead of bread crumbs (it was in an Alton Brown recipe online) and I made it a bit spicy. It came out well enough that I made another one this week. Today, having over 2/3 of the meatloaf left, I crumbled some of it up and turned it into taco filling. It was fantastic! Now I'm on a mission to find more creative uses for yesterday's meatloaf. (Or any meatloaf variations you all have tried and liked.)

It has been 20 years almost since I last ate regular meatloaf but I wonder if you could use it as a base for a shepherd's pie.

Good idea. I even have a shepherd's pie sauce mix that I got from the British food aisle at my local Publix. (There are hordes of Brits here in the vacation kingdom)

You could use the leftover meat in spaghetti or chili or mix it in some mac and cheese (which I think sounds terrible but it's something my husband and son would love.) Or make sloppy joes.

Tonight I'm making bbq pork sandwiches with coleslaw and baked beans. I'm pretending it's not raining out I guess because that doesn't really sound like a rainy day menu.

The meat is easy. Get a hunk or hunks of pork roast of some kind and cut it into largish chunks. Dump in crock pot with favorite bbq sauce(s), salt and pepper and that's it. Okay - maybe add a little water to it to get it going I guess. Should be easy when it comes time to eat dinner, I just have to heat up beans and mix up some dressing for the cole slaw (which is a must on the sandwich if you ask me) and that's it.
