What's a Country Potato? Is it looked down upon by City Potatoes?

Probably - but the country potatoes smirk knowingly to themselves letting them think the city is where it's at... merely to keep them there and out of the country.

And tonight it's carnitas with more homemade salsa. I've been making salsa like crazy lately and putting it on everything. I learned how to make it "right". Cut an onion into quarters or so, peeled and throw it in a hot pan with whole jalepenoes, tomatoes, whatever else (passillo, tomatillo, etc - whatever you like.) Burn everything! You want it a fairly charred. Then cut the stemmy tops off the tomatoes and peppers and throw it all in the food processor with a bunch of cilantro, lime juice and salt to taste. Yummy yummy yummy.

My family is not veggie oriented - but they love this salsa. I make about 4 cups at a time and have made about 3 batches a week for the last 3 weeks. Salsa! Salsa! Salsa!

Last night, composed salad. Composed of spinach and a lot of little things that were leftover in the fridge and a nice fresh lemon herb vinegrette.

It is an unassuming potato that, unlike it's snobbish city counterpart, welcomes it's humble friend, the sweet onion from Walla Walla. It is not shredded like the anorexic city hashed potato, instead it revels in it's chunky goodness. My country potatoes, btw, despise country music. They're more into progressive rock. :D

That's the way I learned to make it in Dallas. They (the family that taught me) called it "que mada".

Roasted fennel & garlic and goat cheese pizza with lots of herbage.

Vicolo cornmeal crust.

Roasting the garlic and fennel when I get home.

Sliced tomato on the side.
