I made my own bbq sauce last night. Nothing particularly interesting, but it looked and tasted like bbq sauce so I was happy. Now that I know I can make a basic sauce, I can start experimenting.

yeah, thats what I do with my chili recipe. I finally worked up a nice baseline recipe and have tweaked and twisted it in a zillion directions looking for "it". still these decades later its a work in progress.


Id be curious to know what you put in the sauce. mine are always kind of bland and have no personality to the point where bottled sauces are far superior...and that just irks me

It was really very simple. I started by heating ummmm...1/4 cup of brown sugar until it was just starting to melt (it will go quickly from melting to ugly-clump, so be careful). Added, err, 1 cup? 2 cups? of ketchup (just kinda squirted it in until it looked right) , stirred and heated. At this point, a lot of the brown sugar instantly turned to hard crystal clumps, but I just kept it all on th heat as I kept going and it seemed to eventually smooth out. Anyway, to that I added vinegar and worcestershire until I liked the color and flavor, then I chopped a couple cloves of garlic and let that simmer on low for, oh, 5-10 minutes.

Oh, that'll be the next step. I did put a little black pepper (thanks for reminding me), but real spicing is phase 2. This was just an experiment to see if the process was sound.
