I think I've decided that I'm just not going to make spaghetti anymore. I'm disappointed every time. The meatballs were really good though.

I also made bruchetta with it and THAT was the best part of it. My husband tells me, as he's devouring it, he shouldn't like this... he doesn't like tomatoes and it looks like it's all tomatoes... and I'm thinking - I KNOW! And then even my 13 year old son is saying he's going to try it and I'm thinking DAMN! I should have bought more basil and cut up more tomatoes.

It's roma tomatoes cut in half and deseeded. I just use my fingers. Dice them up small. Then cut up a bunch of basil. I bought I "bunch" from Winco and stacked up the leaves, cutting them into strips and then once or twice the other way. I added a minced/squished clove of garlic and big splash of olive oil, a small splash of balsamic vinegar and some crunchy sea salt. It didn't look quite right so I put in another splash of olive oil and ta-da. In fact, I'm totally craving it again right now.

I need to skip the spaghetti sauce and use this as a topping for chicken or something instead. It's like italian salsa! (well - it looks sort of like salsa.)
