Mmmm, Thanksgiving leftovers. (Turkey, stuffing, broccoli/rice/cheese casserole all mushed together in a bowl and microwaved. Topped with cranberry sauce)

I made the best sweet potato casserole ever tonight. It was one of the most delicious things I've ever eaten.

I know, right? But it's Thanksgiving, allowances must be made. Lately I'm watching calories more closely than carbs, and staying mostly wheat free, the stuffing was made with wheat free bread. Seems wheat has been the source of a lot of the problems I've associated with carbs, e.g., itchy eyes, congestion, rosacea, etc. That said, carbs in general aren't a great calorie bargain, so I keep them low compared to what most people eat.

Tonight, for dinner, I had a lovely grilled prawn salad with a lemon vinaigrette from a new (to me) chain called Tender Greens. I will go back.

It was slightly made up based on two different recipes, and the amounts were all approximate because I was too lazy to measure.

Some sweet potatoes, peeled, sliced. In pot, cover with water, bring to boil, boil 15 minutes, drain, mash.

With hand mixer, mash up potatoes in a bowl
Add about 1/4 cup evaporated milk, 1/4 cup orange juice, 1/4-ish tsp each nutmeg and cinnamon, 1/2 cup brown sugar, 1/2 salt, 3 Tbl melted butter. blend.

Pour into 9X9 baking dish, top with marshmallows, bake about 30 mins at 350.
