"Deferred pay" means "We hope to get sponsors for our project someday, and if we do, we'll pay you!" which really means there's a .0000000001% chance of even seeing $1 come out of it.
As for regular video services, it's common to receive a deposit at the start of a project, and the rest upon delivery. But, for single day, last minute shoots, it's common to just receive pay at the end of the day once the tapes are handed in.
And, having been screwed over by that "network" from last year, I will never hand over tapes without immediate payment again. So, if someone doesn't have the money that day, I'll only give them the tapes once they do.
Also, I've had my fill of completely gratis work. The Hollywood shoot was the last for me, because that gained me some serious contacts for future paying work. (There are one-time things I'll still do for friends though as my schedule allows, since that's what friends are for.)
I just ain't workin' for free no more. Show me the money, dammit.
