I've made a huge bowl of scalloped potatoes and ham with lots of cheese. I can't wait for them to come out of the oven!

I've really been into pasta salads lately. I'm just experimenting with whatever sounds good. Right now I have a ranch with ham and smoked cheddar sitting in the fridge.

beans n hocks
prep beans as directed on the package (best to soak overnight).
throw one whole quartered onion, salt, pepper, beans n hocks into the pot with enough water to cover
simmer till beans are done (between 2 and 6 hours)

I could live on those.

Trader Joe's has some great breaded eggplant slices. Those, some mozzarella cheeze, plus some spaghetti sauce and you have Eggplant Parmesan.

Or, if you're like me and you like to cheat (I didn't have mozzarella the other night), try using shredded cheddar and salsa. It was really good!
