I made some last week, from scratch, including soaking and cooking the garbanzo beans. was very good, processed 3 full minutes in food processor and it was light and very creamy, not heavy. Needed more garlic, fresher tahini (it was the last of my can and was a little old tasting) It is one of the world's most perfect foods, as far as I'm concerned.
