I would like it, even if she doesn't! It sounds intriguing with a strawberry pie.

The only oatmeal crust I have made was from crumbled oatmeal cookies, kind of like a graham cracker crust.

Oatmeal Pie Crust


Oven: 350°

2/3 cup butter
2 cups oatmeal
1/2 cup sugar
1/2 tsp cinnamon

Place butter in pie tin, and put in hot oven to melt. In a bowl, mix remaining ingredients. Add to melted butter in pie tin, stir. Bake in oven for 20 minutes. Remove and shape to pan. Cool.

And here is my mom's strawberry pie recipe to go in it!


Glazed Fresh Strawberry Pie


1 cup sugar
2 tbsp cornstarch
Pinch of salt
1 ¾ cups cold water
1 regular size box strawberry gelatin
2 boxes whole strawberries, washed and capped

In a saucepan, combine sugar, cornstarch, and salt. Stir in cold water. Cook mixture until clear, stirring constantly. While mixture is hot, stir in strawberry gelatin. Cool in refrigerator until it’s just beginning to thicken.

Fill baked pie shell with the strawberries. Pour chilled glaze over strawberries. Place pie in refrigerator to set and chill.

Speaking of pies, here is a homemade banana cream pie which I made for dessert a few nights ago. And, yes, I did take a photo of it before it was cut up and served.
