Slow cooked Roast in a Tangy Sauce....that's it, everybody fell asleep so didn't feel like cooking anything else to go with it. It was delish.

It's going to be marinated ahi steaks, assorted roasted baby squash, and a side dish of some kind (noodles, couscous, or rice blend).

And for dessert: a coconut custard in puff pastry shell sort of thing from the market.

I made semi homemade chicken burritos.

I roasted a few chicken breasts and shredded them. I cut up some bacon and fried that and then added some drained canned beans.

I made boil in bag rice and then added part of a package of taco seasoning to it.

And I made something I found online called mojo sauce. 2 serrano peppers with seeds removed, juice of 1 orange and 2 limes, clove of garlic, salt and pepper, little olive oil. Minced the pepper and garlic in the mini chopper then added the rest and let that set for awhile.

Took all that with a little cheese and sour cream and made chicken burritos.

AND I have 4 burritos left which will be lunch or dinner for tomorrow and then some.

The mojo sauce was quite yummy. Like a citrus dressing almost with a little kick.

Three cheers for the Trader Joe's demo kitchen! Today they had chicken burrito casserole. She used 4 chicken burritos (two packages from the frozen section) and poured over a jar of salsa (she said be sure not to use "fresh" salsa as it wouldn't work right in the cooking), and shredded mexican cheese blend. 25 minutes in a 350 degree oven (covered with foil). Awesome.

So I based dinner on that, but varied it. Used chicken enchiladas instead, but since they turned out to be smaller than the package would indicate, I decided to pad dinner up with some rice, so I made a mexican red rice (a variation on this recipe), and placed that in the base of the casserole, put the enchiladas on top of that, poured over less salsa (because the enchiladas had so much sauce included), and used just straight up cheddar shreds since that's what I had.

I'll let you know how it turns out!
