In the end, the enchiladas themselves were too spicy for Alex, but the overall dish was a pretty good idea. Would probably do again in future with the same rice, and just straight-up chicken, and cheese of course.

It looks yummy!

Today I have thrown onions and peppers in a pot and added chopped roast and some enchilada sauce and am stewing nicely. I think I'll add a few more ingredients and then roll up in a tortilla, maybe enchilada style or maybe chilli colorado style. I don't know, I'm just playing around with what I have!

Tonight....Pepperoni Bake, another new one, we'll see what it's like. Recipe sounds good, kinda like an easy Lasagna with Pepperoni topping.

Dinner tonight was freaking awesome in spite (or perhaps because) of its relative simplicity.

Chicken breasts (on the bone), marinated in Lawry's Garlic Herb marinade and baked in the oven till done, served with buttered noodles.

I used 1/2 the bottle for the two chicken breasts, and then when I plated mine I added just a couple drops of (unused, of course) marinade back on top. Awesome awesome awesome. Highly recommend.

Caesar salad to start
New York Strip (Medium) with Peppercorn
Blue Cheese Mashed Potatoes
An excellent Cabernet

All in all a good dinner - especially in light of the fact that I didn't have to pay!

Last night was bbq shredded pork sandwiches with cole slaw and artichokes... and we would have also had fruit salad if I would have remembered to put that out too. darn it.
