Meatloaf, green beans from the Farmer's Market in the neighborhood and herbed rice. 'Cause I don't have any potatoes. Wolfy must have them...:)

The family recipe spaghetti... sort of. I had to improvise with some ingredients. But it's tasty, so no worries :)

I think I just may stop by Wolfy's for dinner every night. We never have anything that sounds as yummy as her meals.

What was regular spaghetti with meat sauce two days ago will get some diced bell pepper, chile powder, some diced tomatoes, and shredded cheese to become -ta da! - baked spaghetti.

The requisite ridiculously loveable organic greens will also make an appearance.

Once upon a time there lived a single girl, she had not lived alone for a long while. But now, her ex-roomie is gone off to a new adventure in Mexico and and now, it's just she and the cat in single blessedness. The cat got a small shrimp for a dinner treat. Tonight's bill of fare, Risotto with mushrooms and pancetta (Italian bacon to you)

Saute pancetta until delicious fat is rendered and until it begins to crisp, remove from pan, leave the drippings in.

Slice and add mushrooms of your choice, saute on medium high heat, I like mine roasted, and flame with some marsala if you have it. Remove from pan and set aside.

Chop garlic and shallot, saute in some olive oil until it smells divine, and don't let the garlic burn.

Quickly add arborio and toss, stir, just mix it up. Let the rice saute and toast a little bit, keep tossing the pan for a few minutes.

Add some wine (hard to do, photographing with one hand and pouring with another).

Top with parsley and some pancetta and cheese as desired.

Methinks the girl will be living very well fed if there are many more night like this
