Today I had a mushroom and bacon pannini - it was good

I think everyone had a better lunch than I did.

Not I. I had crappy pizza bought by my company because some schmuck scheduled a meeting at noon and left me unable to go out and get lunch.

Spicy Chick-n-Crisp Sandwich from Burger King and a Diet Mountain Dew. At least the MD was free and the sandwich was only $0.99.

NA wins. Sorry, but even crappy pizza is pizza, and especially good since it was free, anyway.

Yes, but it was further tainted by the circumstances (surprise noon meeting that I had absolutely no need to be at but had to go because my manager was on vacationn).

This is getting a bit away from bacon..

Unless the pizza was a bacon pizza and the chicken crisp was made from a pig-chicken.

The Lashpair just had Bacon & Eggs for breakfast. :p

Yesterday had some friends over for lunch (and a tarot card reading which was fun). On the menu (my new favorite condiment) chimichurri marinated chicken kabobs (awesome) and an incredible new side dish that will absolutely be in my repitoire now and forever. It is roasted stuffed peppers*

6 Red, Orange Yellow bell peppers (with stems - split and the seed pod and vein removed)
6 slices of thick bacon
variety of hot peppers (I used serrano and red jalapeno)
multi-colored cherry tomatoes
pitted calamata olives
capers
garlic
salt & pepper
parsley
basil
olive oil

Slice the peppers in half, remove the seed pod and the white rib/vein. Lay them out in a baking dish & add a dash of salt & pepper to the inside. Slice the hot peppers into rings (remove the seeds if you're wimpy). In a bowl, mix the cherry tomatoes, capers, pitted kalamata, pepper rings, chopped garlic, parsley and basil, drizzle in a bit of olive oil, mix well with your hands. Stuff the mixture in each pepper half, top with more shredded basil, then fold a bacon slice to cover the top of each pepper. Drizzle more olive oil on and around the peppers, add about 3 tables spoons of water and cover with foil. Bake in a hot oven for 15-20 minutes, then remove the foil and roast in a 425 over until browned and roasted and the bacon is cooked on top.

They were absolutely delicious! I'm sure I can and will modify this dish in the future with other goodies in it, but I will bet it's even delish without the bacon.
