Help me spend money
 
Unfortunately, you won't be getting any benefit from it though (other than the warm fuzzy feeling of having helped someone).

As a gift for someone who is a fellow Disney Geek, we (work) want to get him a Disney related gift. We have about $500 to spend. He and his wife already have Premium APs. There was mention of an extended weekend at the hotel over Thanksgiving, but I know more than two nights will break the $500 budget.

Any suggestions?

I went to the Disney web site and the only way it was showing that I could book was if I booked a two or three-day park hopper at the same time - WTF?!? I didn't spend too much time on it and there may be away around that. But I was able to go to Hotels.com and see that for a Basic Disneyland Hotel room for 11/26 and 11/27 would be $234 per night (plus taxes, etc.)

Any other (better) ways of booking?

A VIP tour of some sort would be cool, I think.

Personally, I'd get an ATIS attraction poster. :-) But they'd never get that.

I would go for memorabilia, as some others have said - attraction posters, framed maps etc. Do you know what they're into? Pins, characters, films, attractions? If you have any idea on their likes and dislikes then a $500 piece of Disney Gallery art would be an amazing gift.

One of my first thoughts. Would have loved to tie it in with a night at the Grand Cal, but word has it that they wouldn't be spending much time in the room. Seems they really want the rooms, so we may be going that route.

My fears on memorabilia are 1) getting them something they don't want (I have found that people can be picky about their memorabilia), and 2) getting them something they already have, or 3) they don't have any place to put said memorabilia.

I have personally been on a "no more crap in my house" kick lately, so that may be clouding my judgment.

Actual construction is cheap, but the association fines are steep.
