Care to share your menu? Have a great new recipe?

After one week of stir-fry and one week of veggie burgers, I need some inspiration.

Food, hopefully, I'm hungry!

By any chance (and I don't remember if you've said it before), are you vegetarian or vegan? I'm not, but I'm just asking so I can tailor my ideas, since I tend to end up eating vegetarian a lot. My main mealtime M.O. is transferring into grilled stuff. I think a little later today I'll be getting some grilled asparagus, which is one of my favorite grilled veggie of all time. Last week, I made a pretty awesome vegetarian minestrone, which ended up being really good cold... Thinking of cold, I also love gazpacho. Mm..

And whether you're a meat eater or veggies only, I have taken a liking to throwing small diced apples into pasta salads and putting the other flavors around that. You can add chicken or eggs, or whatever, and it all seems to blend pretty well.

I remember this thread being particularly helpful last summer... I may have to peruse it again.

I'm vegetarian (but have no problem cooking vegan as long as the meal has some protein and I can have a bil 'ol piece of bread with it).

My wok seems to get a lot of use in the summer. I don't have a grill.

If anyone has a great gazpacho recipe, I am so ready for that. I've even got a brand new set of knives (my first good knives ever!), so I'd love anything that involves chopping lots of veggies right now.

Just made this last night - got the recipe from the latest issue of cooks illustrated.

(paraphrased)

Grilled Potatoes

Chop about 3 tablespoons of garlic and a tablespoon of fresh rosemary. Add to 4 or so tablespoons of Extra virgin olive oil with some salt and put in a small pan over medium heat. When just sizzling, about 3 minutes, turn down to medium low for another 3 or so minutes until garlic is just blonde. Do not brown.

Remove from heat and strain solids from liquids. Put one tablespoon oil and one tablespoon solids into small dish and hold on side.

Brush potatoes with 1 T garlic oil, sprinkle with salt and microwave for 4 minutes. Turn over and zap for another 4 minutes. Should be just getting tender.

Brush with remaining garlic oil and put over medium hot grill for 3-4 minutes and turn for another 3-4 until grill marks appear. Move to cool side of grill and cook until cooked through, another 4-6 minutes or so.

Remove from skewers and toss in large bowl with reserved olive oil and solids mixture. Add salt and pepper to taste and serve immediately.

They were excellent with grilled garlic lemon chicken also from the same issue of Cooks Illustrated. How I love that magazine!


18 baby red potatoes about 1 1/2" in diameter - cut in half. If bigger, cut into quarters or eighths.

Skewer on wooden skewers so the flat sides all line up.

I am having watermelon. Boy is eating at his dad's, which means he will come home hungry. I will figure something out for him when he gets home.

Tomorrow we will probably be having marinated, grilled chicken (love my GF grill), rice, veggie and canned biscuits. All I have to do is mention chicken and he runs to the back door to make sure she is safe.

I've been looking at a cookbook of mine that has lots of Indian recipes. Tempting, but I waited too long to go to the grocery and I needed to do something quicker.

I had stuffed tomatoes, based loosely on the recipe I linked above. It made 4, and I might have to have seconds sometime before bed.

I must shamefacedly admit that gazpacho is a dish I would like much better heated up.

I've been enjoying some cheese enchiladas the last couple of days, made with red and green chilis that I ordered from Santa Fe, NM. (Where my young palate was trained) If you happen to find yourself in my neighborhood, "I be willin' to share, I be." (Caution - these ended up being pretty hot)

Tonight I had grilled eggplant, zucchini and asparagus along with some yummy steaks. The steaks were excellent - but the eggplant put me over the top and into tastebud heaven.

I came up with a pretty good tofu meal the other night. I cubed the (firm) tofu, then made kind a peanut teryaki (soy, honey, peanut butter, sesame oil, and sesame seeds. Poured the sauce over the tofu in a baking dish, put it in the oven at 325. Cooked some rice noodles, chopped up some green onion. Once those were done, pulled the tofu out of the oven and served it over the noodles.

The easiest pasta dish in the world without using Ragu in a jar:

Pasta of your choice
canned diced tomatoes (we usually use 2 cans and we have leftovers)
goat cheese crumbles
basil

While pasta is cooking, mix tomatoes (don't drain them, throw the whole can in), cheese and basil in large bowl. Drain pasta and toss with mix. Serve.

GC can vouch for this dish - it's really tasty. Works well with a salad-in-a-bag, garlic bread, etc. If you really want to use your nice new knives, I'd recommend slicing tomatoes and adding a small can of tomato sauce.

I've made a huge bowl of scalloped potatoes and ham with lots of cheese. I can't wait for them to come out of the oven!

I've really been into pasta salads lately. I'm just experimenting with whatever sounds good. Right now I have a ranch with ham and smoked cheddar sitting in the fridge.

beans n hocks
prep beans as directed on the package (best to soak overnight).
throw one whole quartered onion, salt, pepper, beans n hocks into the pot with enough water to cover
simmer till beans are done (between 2 and 6 hours)

I could live on those.

Trader Joe's has some great breaded eggplant slices. Those, some mozzarella cheeze, plus some spaghetti sauce and you have Eggplant Parmesan.

Or, if you're like me and you like to cheat (I didn't have mozzarella the other night), try using shredded cheddar and salsa. It was really good!

Since dinner was early and it was tomato soup (had to do *something* to deal with a gazpacho craving, and sadly, though I love tomato soup, it just didn't cut it), I just had an apricot and some cottage cheese.

Ooh, artichokes would be awful to one with braces. How about having just hearts, WB? Those tossed with olive oil, salt and lemon would be good (and not hard on the braces) Trader joe's has some nice baby chokes in the freezer section, I think you could get by. Of course, they're not fresh, but in a pinch, they're more than good enough.

I cooked up some chicken and vegetable won tons that my grandma prepared earlier today. She also made some veggie California rolls and miso soup. I love it when she makes it - I can make it, but it's always better, somehow.

They're not hard to make, either, no matter how you like them. I don't have a recipe, though if someone wants to know how to do it, I'd be more than glad to share my experiences with various types of won tons...

I still think it would be so fun to have a california roll making party, thinking of what else my grandma made... We should do that before I move.

I have taken on a cooking challenge - which means I'm actually "cooking" instead of getting sushi or Thai. The challenge is - no heating of the stove.

Last night I made a salad of canned tuna, greek yogurt, tamari almonds, green onions, mushrooms, grapes and butter lettuce with a misting of balsamic.

Tonight was canned turkey, dried cranberries, green onions, mushrooms, with pesto sauce over an herb salad mix.

TWednesday night will probably be lentils, orange, red, yellow peppers, purple onions, cucumbers, tomatoes and feta in a balsamic dressing.

I also bought canned chicken and granny smith apples to make a curry chicken salad.

That should get us to the weekend.

Last night I grilled up a skirt steak (or flap steak as the markets have decided to start calling them) that's been marinating since Saturday. Sauteed some veggies, and made some Spanish rice.

Saturday was a good meal too. We made a fantastic hearty potato soup with sausage. And as a first course, I made prosciutto-wrapped mozzarella slices (mmm, found some good mozzarella) with white peaches and balsamic vinaigrette.

This lentil salad I made is pretty good (and will be even better tomorrow). Completely vegetarian and, if you left out the Bulgarian feta, vegan.

Steamed French Lentils (2 packages from TJs)
1 red pepper
1 orange pepper
1 yellow pepper
1/2 red onion
8 green onions
1/2 Japanese cucumber
6 vine-ripened tomatoes
cubed Bulgarian feta

Dressing:
Balsamic vinegar (1/4 or 1/2 cup?)
3 cloves garlic
dried thyme (handful)
dried mint (the rest of the jar)
Olive oil to top it off.

Chop up everything and put in big bowl.
Mix dressing in separate container then add to chopped ingredients
Let sit for a bit.
Eat it for days with it getting better each day.

Haven't eaten. Sitting here drinking a Coke and waiting for Alex. I was going to nuke a tv dinner, but the ants have once again invaded my kitchen. I hit the trails with the Windex, but now the ant triage unit has moved in. (sigh) I can't win against these fvckers. For the last two weeks we've fought back the ants - kitchen, living room, bathroom, you name it. We no sooner obliterate them in one spot than they swarm another. I still haven't figured out what they find so bloody interesting about my bathtub... must be something in the soap we use. Anyway, I don't like to go spraying flat-out poison around the kitchen (hence using windex instead, which, being a direct stream is easier to control than aerosol), so the battle rages on.

Dinner gets to wait.

Get a caulk gun, and caulk where they are getting in. After about 20 tubes of caulk, and 2 years, they will give up.

For most of today I had a mug of tea (with sugar), 6 Swedish fish, and a small bag of candied pineapple. And a lot of adrenalin.

Then for dinner I had a 6 inch subway, half a bag of chips.....and a giant movie popcorn with extra butter, giant soda of doom, and dark chocolate M&Ms.

I feel a little off now. I wonder why?

omg, I'm proud of tonight's dinner.

First course, butternut squash apple soup from Trader Joe with a dollop of sour cream. Main course, grilled sirloin and portobello with a red wine and honey reduction topped with crispy pan fried shallots.

The sirloin was cooked perfectly, the reduction was divine, and the shallots (CP took care of that part) were crispy and delicious. The only mistake, rightly pointed out by CP, was that the mushrooms should have been plated as a side, not on top of the meat, their flavor got lost even if the texture was nice.

For dessert, circus animal cookies. Mmmm, sprinkles.

My dinner for the last 3 days has consisted of "soft foods" as recommended by my dentist. The first night was soup - not so satisfying. The second night, a peanut butter and banana sandwich, thanks to a craving from reading LoT. Last night, I decided I needed real food and went and got sushi. Last night was certainly the best of the three.

Each package is 17.6 oz (already cooked). And, these are the French lentils that are not split. Lentils du puy would be fine - although they are green and not brown as these are. But, they are small and whole.

So, I made e new salad tonight that has potential but just isn't quite there yet. It needs some tweaking.

Ingredients:

Shredded rotisserie chicken
Granny Smith Spples
Red Grapes
Toasted almonds
Japanese cucumber
Green onions
Mushrooms
Sliced Fennel


Dressing was:
Plain yogurt
lemon juice
mint
a touch of vinegar and oil
fresh garlic

I think there was just too much chicken and not enough crunchies and the dressing could've been a bit better. Any suggestions?

Oh, something we've been putting in salads {although I don't know how it would go in yours...} is cilantro. My sis in law used it from her garden while we were visiting and it really added a nice taste. Might that it was fresh? She also used frozen berries from her garden in the champagne, too.

Now I'm up at our Forster Beachhouse, and we're making for tomorrow nights dinner: Kofta Kari (Lamb meatballs in thick spicy gravy)

Dessert is crunchy oat-based Anzac biscuits spread over with Lite marscapone cheese beaten with Grand Marnier and yuzu juice, then topped with strawberries, loganberries, blueberries, mulberries, currants, then more of the marscapone orange cream dolloped on top. Place a small Disney Snowglobe on top for garnish and serve.

This recipe I made up. It pwns all other healthy desserts.

I feel compelled to share because I made it myself :) Went into Henry's at lunchtime for some avocados and they had the most awesome looking seafood at this big booth in the middle of the aisle. So I came back after work (by which time it was all back at the meat counter) and picked up the colossal shrimp and the lovely scallops.

That's shrimp and scallops in a white wine sauce with garlic, shallots, and onions.

yeah, thats what I do with my chili recipe. I finally worked up a nice baseline recipe and have tweaked and twisted it in a zillion directions looking for "it". still these decades later its a work in progress.

It was really very simple. I started by heating ummmm...1/4 cup of brown sugar until it was just starting to melt (it will go quickly from melting to ugly-clump, so be careful). Added, err, 1 cup? 2 cups? of ketchup (just kinda squirted it in until it looked right) , stirred and heated. At this point, a lot of the brown sugar instantly turned to hard crystal clumps, but I just kept it all on th heat as I kept going and it seemed to eventually smooth out. Anyway, to that I added vinegar and worcestershire until I liked the color and flavor, then I chopped a couple cloves of garlic and let that simmer on low for, oh, 5-10 minutes.

This week's vegetable delivery had a TON of root vegetables in the mix (it is winter). I went searching for a good root vegetable soup and found one that I made tonight. It was VERY good!

Roasted Root Vegetable Soup
FAST
SERVES: 4
You can adjust the amount of each vegetable to suit your taste, but keep the total quantity the same.
INGREDIENTS
1 large beet (1/2 pound)--peeled, halved and sliced 1/3 inch thick
1 medium turnip (1/2 pound)--peeled, halved and sliced 1/3 inch thick
1 medium parsnip (1/2 pound)-- peeled and sliced on the diagonal 1/3 inch thick
1 medium onion, thickly sliced
2 tablespoons extra-virgin olive oil
4 cups chicken stock or canned low-sodium broth
Salt and freshly ground pepper
Crème fraîche or sour cream, for serving
1 1/2 tablespoons chopped fresh dill
DIRECTIONS
Preheat the oven to 500°. On a large rimmed baking sheet, toss the beet, turnip, parsnip and onion with the olive oil and spread in a
single layer. Roast the vegetables for about 20 minutes, stirring once or twice, until tender and golden brown around the edges.
1.
Transfer the vegetables to a large saucepan. Add the stock; cover and bring to a boil. Simmer over low heat until the vegetables are
tender, about 10 minutes.
2.
Working in batches, puree the soup in a blender or food processor until smooth. (Alternatively, use an immersion blender to puree
the soup.) Return the soup to the saucepan and reheat gently. Season with salt and pepper. Ladle the soup into deep bowls. Top with
a dollop of crème fraîche and the chopped fresh dill and serve at once.
3.
MAKE AHEAD The soup can be refrigerated for up to 3 days.

That soup sounds great! And I love how they are delivering things seasonal-like like that.

I had salad with chicken on top, and raspberry lime vinaigrette. The salad was a bagged one called "veggie lovers" which is awesome because it is much like the plain old lettuce/shredded carrot/cabbage thing, but with bigger chunks, and radishes and pea pods. Convenient and tasty. Chicken was cooked in olive oil and fresh garlic. Trader Joes sells unfiltered extra virgin olive oil; for when extra virgin isn't virgin enough. Really flavorful and good. I cooked enough chicken for 3 dinners, so I don't have to cook until Thursday hooray!

Another new kitchen experiment that had decent results:

I didn't have fresh Ginger on hand and I used Frensh English Peas instead of frozen, but it was good.

Aloo Gobi Mattar: Potato, Cauliflower and Pea Curry



ALOO GOBI MATTAR (POTATO, CAULIFLOWER & PEA CURRY)

1 large cauliflower, cut into small florets
2 large onions, chopped into 1/2-inch chunks
3 medium baking potatoes, peeled and chopped into 1/2 "- 3/4-inch chunks
1 cup frozen green peas
1 cup vegetable stock or chicken stock
4 tablespoons olive oil or ghee
2 tablespoons fresh ginger, grated (including juice)
2 tablespoons fresh ginger, peeled and finely minced
5 garlic cloves, minced
2 medium hot green chili peppers, minced (seeds included)
2 teaspoons turmeric
1 tablespoon garam masala
2 teaspoons ground coriander
1 teaspoon salt
1/2 teaspoon white pepper (optional)
1 teaspoon fenugreek seeds
1 teaspoon ground cumin
1 teaspoon cumin seeds
1/2 lemon, juice of
1/3 cup fresh cilantro, chopped

Heat oil in a large wok, karahi, or deep nonstick pan over high heat. Add onions and cumin seeds, and cook until onions are translucent. Then add the minced garlic, chunks of ginger and chili pepper. Sautee for 2 minutes, stirring frequently.

Add all remaining spices, including salt. Stir well.

Immediately add potato to pan. Stir until coated in oil and spices. Turn heat down to medium and sautee potato for 3-5 minutes, stirring frequently.

Add chicken or vegetable stock, then put lid on pan, lower heat to medium-low and simmer for around 15 minutes.

Add the cauliflower florets, grated ginger and lemon juice. Stir well. Replace lid, turn heat to low, and let simmer for about 10 minutes. If the ingredients are sticking to the pan, you can add a bit more stock or 1/4 cup of water at this point.

Add frozen peas to pan, and stir ingredients. Cover and simmer for 10 more minutes.

Turn off heat. Add half of the fresh cilantro, and mix thoroughly. Replace the lid, then allow to rest for 10 minutes before adjusting salt to taste and serving dish over rice. Garnish with remaining fresh cilantro. Makes about 6 generous servings.

Tonight, the Stoat and I made "Clean out the veggie crisper and root cellar soup" - It contains Swedes, parsnip, sweet potato, corn & Lite Sour Cream.

Matterhorn Fan would be proud - it's all vegetarian except for the bacon stock-cubes, but we ARE LoTters, so therefore a certain amount of bacony goodness needs to occur, however I think the cubes are vegetarian ones anyway, but they might not be.

We're serving it up with Crispy Oven-bread and dessert is "strawberry mousse with whole strawberries poked into it at random"

...I wonder what the Poor Folk are eating ?? :D

I made this for dinner. Easy and scrumptious!

Easy Chicken Parmesan

1/3 cup extra-virgin olive oil
2 large garlic cloves, pressed
1/2 teaspoon salt
1 teaspoon dried oregano
Large pinch of red pepper
4 skinless boneless chicken breast halves (about 6 ounces each)
1/2 cup finely grated Parmesan cheese
6 ounces fresh mozzarella, thinly sliced

Preheat oven to 500° F. Whisk first 3 ingredients in large bowl. Mix in the oregano and crushed red pepper. Coat chicken with garlic oil mixture.
Place 1 cup Parmesan in pie dish. Dip 1 side of each chicken piece into cheese to coat; arrange chicken, cheese side up, on a large rimmed baking sheet or in a glass baking dish.
Roast chicken until just cooked through and firm to touch, about 10 minutes. Arrange mozzarella slices atop chicken. Return to oven; roast until cheese melts, 1 to 2 minutes.


I served it with brown rice and a spinach, feta, and walnut salad with raspberry vinagrette.

I made sausage biscuits with a fried egg on them. Breakfast sandwich for dinner. It was quick and something the whole family will eat. Not that it's very healthy but-whatever. ;)

Tonight for Australia Day Dinner, we're having Aussie Lamb chops and Flummery. Everybody's Aunt in Australia made Flummery.

Aussie Flummery (Aunt Mary's Recipe)

1 packet Jello (any preferred flavour)
1 tin (375 ml) Carnation evaporated Milk

Make up a packet of Jello using only 1/2 cup of boiling water. Allow to cool, but not set. [I like to add an extra sheet of gelatin to the jello to make sure it sets nice and firmly]

Beat evaporated milk with beater until doubled in volume. Mix through the cooled Jello thoroughly.

Pour into serving dishes and chill in fridge. If dedsired two lots can be made of complementary colours and layered in the bowls. Use see-through bowls if doing this (duh).

Last night we had pork chops with a nice pan sauce that included some dijon, rosemary, balsamic and a touch of butteh. With that we had noodle-stuff - rotini with some browned butteh and parmasan, steamed brocolli I made in my steamer I found in the back of a very long, dark cupboard I haven't looked down in years. (hey steamer! I remember you!) And some sourdough rolls.

I will have leftovers today for lunch.

This was the simplest version I make, though I tried a new twist that I think helped a lot.

1 lbs ground beef (the leaner the better).
5 spicy italian sausages, casing removed
2 15oz cans diced tomatoes (preferably no salt added)
1 can tomato sauce (again, I prefer no salt added)
1 can tomato paste
1 medium red onion, chopped
1 Tblsp garlic
salt, pepper, Italian seasoning

Saute garlic and onions with some salt and pepper in a large skillet (5qt is about right). Add beef and sausage and Italian seasoning (sorry, no measurements. But don't be shy, at least a couple Tbsp worth). Cook over medium high heat, breaking the sausage up, stirring regularly until meat is almost cooked through. Add the various cans of tomato products. Stir, heat to boil, reduce heat to low and simmer. Leave simmering, uncovered, for a couple hours.

Once the sauce has just begun to thicken, take it off the heat. Let sit for a while, until it's cooled to just about room temperature. Then turn the heat back on to low, get it back up to a simmer. 30-40 minutes before you want to serve, turn the heat up just a bit, you want a fast simmer, nearly a boil. Let it cook at that heat until it's starting to dry out. Don't stir, you actually want the bottom layer of it to burn just a little bit. Once you do get that little bit of burn at the bottom, turn off the heat, give it a good stir, and serve.

And of course, taste it along the way and add salt, pepper, or seasoning as needed.

ETA: oh yeah, you can also throw some red pepper flakes in when you're sauteing the garlic and onion. 1/2 tsp will give it a little kick, go up from there to your desire.

I am now in love with panko crumbs. My god that was divine and I just ate another piece. I just went with an Alfredo sauce and added some roasted red pepper to jazz it up for the pasta. I really liked the flavor of the fresh pasta vs the dry stuff. To bad it's usually the dry stuff but I found a package of fresh marked down, so it was a nice treat for about the same price.

GD - the sauce was a hit! About 45 minutes into cooking my daughter started bugging me to taste the sauce. She then begged me for the next 2 hours to serve it. Even leftovers which I'm not sure if I'll use as spaghetti sauce or not. Seems like I might be able to just throw in some chili powder and kidney beans and call it chili.

Phew. I was just coming back here to warn you that I forgot an ingredient. Sugar! With that much tomato, some sugar is usually a good idea to cut the acidity a bit. But I guess the sugar in the can of tomato sauce probably served that purpose well enough.

Good call on the chilli.

I'm eating the rest of the leftovers right now for lunch (just that sauce).

Dinner last night was 50/50 chicken manicotti.

I took a few chicken breasts - boneless skinless uncooked and put them in the food processor and zipped them a bit. Then added a bunch of parm. cheese, mozzerella, garlic salt, italian seasoning and pepper. Whirled that around until it was mixed then stuffed it into uncooked manicotti shells.

In a 9x13 pan I put a little spaghetti sauce on one side and alfredo on the other. Put the stuffed shells in a a little water... maybe a little less then 1/4 cup. Then top with more sauces so you have 1/2 tray red and 1/2 tray white. Then lots more cheese on top. cover with foil and bake at 350 for an hour or so. Then remove the foil and cook more until it's bubbly and melty and yummy looking.

I like to have one of each. :)

I make this same recipe a few different ways -by cooking the noodles first - by using chicken tenders and string cheese just shoved in them...

All good - but this was the easiest method so far. And delish too!

I figured it worked with lasagne noodles so why not try it out - and they are waaaay easier to stuff that way. It's hard to know exactly how much water to put though so I just sort of eyeball it. The bonus is that the noodles aren't really overcooked from getting cooked twice when the dish is done.

On Monday I broiled a tri tip with a very simple salt, pepper, and cinnamon rub. I served it with a roasted red pepper (roasted myself), sauteed mushroom, cilantro puree that came out almost perfectly (went a little heavy on the garlic that I threw in last minute). Side was simple matchsticked italian squash (green and yellow) sauteed with salt and pepper, al dente, and the remainder of the mushrooms that didn't make it into the puree.

All in all a good result for something I thought of while wandering the supermarket ailes. I was mostly just pleased that the puree ended up flavorful, with the roasted peppers really coming through.

peanut oil
1 small onion sliced

1 large can of el pato Mexican hot sauce

in a heavy pan (I use my 6 qt pan) add a couple splashes of peanut oil and heat, meanwhile put the flour in a zip lock bag and dump in the meat chunks, shake hard to coat each piece, when the peanut oil is hot to the sizzle point dump in the meat a bit at a time and brown all of it on all sides. Add the garlic and onion and sauté until tender. Add the rest of the flour and brown it up. At this point you can do one of two things, add the el pato to that pan and turn everything down to a low simmer and cook for about 2 hours ‘give or take’ or dump everything in your crock pot and forget it for several hours. The test is to fish a piece of meat out and try to smash it with the fork…when you can do that easily it’s done. If the sauce isn’t thick enough you can add a bit of corn starch mixed in cold water and bring it up to a rolling simmer to thicken before serving. The sauce should be the consistency of good gravy.


Refried beans: These are a do ahead dish

1 pound dry pinto beans – sorted/cleaned and soaked overnight
1 medium white (or yellow) onion quartered
garlic to taste
1 tsp salt at the very end of the cooking time

Rinse the beans and put them in your favorite crock pot (see a theme here?) cover with just enough water to cover the beans, the water won’t evaporate nor will it absorb into the beans since you soaked them over night. Quarter one white onion (yellow is fine if that’s what you have on hand) and throw in some garlic to taste…cook until the beans are tender but not mushy. When the soup starts turning brown (about 2 hours before the beans are done) add your salt to taste. You can’t skip the salt or the beans are just bland/flat.

Using a slotted spoon or drainer, drain the beans but reserve the liquid.

In a heavy skillet fry up 6 slices of bacon, the fatter the better, you’re after the bacon grease here….once the bacon is done and the grease is available start adding the whole beans into the skillet, munch on the bacon as a snack you won’t be adding it to the beans….stir the beans frequently and use the spatula to smash them as you are stirring/frying them you don’t want to mash them to mush but break them up so they get that rich bacon flavor infused…if the beans are too thick just add a bit of the reserved bean soup to get them to the consistency you like.

At this point if you have your Chile Colorado in a crock pot and your rice in your rice steamer you can cover the beans and turn them off while you warm your tortillas then serve and eat…I like to have lime wedges on hand for a finishing touch.

Perhaps it was the brightly colored, almost circus-like label design. I don't know. I've been avoiding Goober all my life. It has always seemed like such a gimmicky item. And historically, I have always liked to have my PB and J strictly segregated on their respective bread slices until the very moment I shove them together. The idea of a little bit of peanut butter contaminating the jelly jar has, in the past, always horrified me. So, Goober ought to be absolutely the wrong thing for me.

But, I bought a jar. And to my astonishment, I like it. And it's SO convenient! Why did I wait so long!?

Tonight I pretended I was at the Blue Bayou of old. We had a little prime rib, clearanced for $6, Bayou potatoes and a salad with some candied pecans. Gary couldn't guess where we were eating until I turned the lights off and then he says " I can't see my food, we must be at Blue bayou." We rode Pirates enough, we just pretended we were seeing it from the other side. Zach even wound up the LED flashlight to make fireflies :cool: it was a fun night!

I made semi homemade chicken burritos.

I roasted a few chicken breasts and shredded them. I cut up some bacon and fried that and then added some drained canned beans.

I made boil in bag rice and then added part of a package of taco seasoning to it.

And I made something I found online called mojo sauce. 2 serrano peppers with seeds removed, juice of 1 orange and 2 limes, clove of garlic, salt and pepper, little olive oil. Minced the pepper and garlic in the mini chopper then added the rest and let that set for awhile.

Took all that with a little cheese and sour cream and made chicken burritos.

AND I have 4 burritos left which will be lunch or dinner for tomorrow and then some.

The mojo sauce was quite yummy. Like a citrus dressing almost with a little kick.

Three cheers for the Trader Joe's demo kitchen! Today they had chicken burrito casserole. She used 4 chicken burritos (two packages from the frozen section) and poured over a jar of salsa (she said be sure not to use "fresh" salsa as it wouldn't work right in the cooking), and shredded mexican cheese blend. 25 minutes in a 350 degree oven (covered with foil). Awesome.

So I based dinner on that, but varied it. Used chicken enchiladas instead, but since they turned out to be smaller than the package would indicate, I decided to pad dinner up with some rice, so I made a mexican red rice (a variation on this recipe), and placed that in the base of the casserole, put the enchiladas on top of that, poured over less salsa (because the enchiladas had so much sauce included), and used just straight up cheddar shreds since that's what I had.

I'll let you know how it turns out!

In the end, the enchiladas themselves were too spicy for Alex, but the overall dish was a pretty good idea. Would probably do again in future with the same rice, and just straight-up chicken, and cheese of course.

I think I'll add a few more ingredients and then roll up in a tortilla, maybe enchilada style or maybe chilli colorado style. I don't know, I'm just playing around with what I have!

Dinner tonight was freaking awesome in spite (or perhaps because) of its relative simplicity.

Chicken breasts (on the bone), marinated in Lawry's Garlic Herb marinade and baked in the oven till done, served with buttered noodles.

I used 1/2 the bottle for the two chicken breasts, and then when I plated mine I added just a couple drops of (unused, of course) marinade back on top. Awesome awesome awesome. Highly recommend.

I'm marinading pork ribs in the BEST BBQ sauce I've ever made, and it's so simple !! It doesn't make a whole lot, so next time, I'll double the recipe.

Easy-Made Barbeque Sauce (makes about 1 1/2 cups)

1 cup Catsup
1 cup Water
1/2 Onion, finely chopped or grated
1/4 cup Cider vinegar
2 tablespoons Light brown sugar
1 teaspoon Paprika
3/4 teaspoon Liquid smoke (I used the Mesquite - I love this stuff)
1/8 teaspoon Celery seed
8 drops Tabasco sauce

Combine ingredients in saucepan. Bring to a simmering stage. Simmer about 15 minutes to blend flavors and thicken slightly.

PUT ON LAYER OF PEPPERONI
PUT ALL OF CHEESE MIXTURE NEXT

I used to make a version of that with hamburger and a little something else on it - thousand island dressing perhaps? .. we called it big mac pie.

Chicken with Olives
1 chicken, cut up
2 t cumin
a little olive oil
some garlic, minced
1 cup dried fruit, your choice
1 cup dry white wine
1 cup chicken broth
as many brine-cured green olives as your heart desires

1. Sprinkle chicken with cumin, salt, pepper
2. Heat oil in skillet over med. heat. Add chicken and sauté until brown.
3. Add garlic, dried fruit, wine, broth, and olives.
4. Bring to boil, reduce heat, and simmer 1 hour.

It goes great with couscous.

Tonight will be oven roasted chicken flavored with garlic, thyme, rosemary, lemon and pepper. With roasted potatoes, carrots and two little artichokes all cleaned up along with it and some sort of sauce from the drippings and some chicken stock.

And some french bread from Fresh and Easy.

For dessert, a little key lime pie also from Fresh and Easy.

Have you been there? We went and I was pleasantly surprised by the prices. Pretty good! We had a pot roast from there the other night and it was really tasty.

Sadly, didn't take many pictures this year. I do have pics from 2006 and 2007.

However, I did try to take some pix of Susan's new bed treatment. This year, she added velvet "curtains" all the way around our bed and a "ceiling" as well. The idea was to keep as much of he warm air on us at night (it gets kinda chilly at night).

Fave Beef, Rice & Cabbage Rolls Tonight !!
 
This is one of our favourite dinners, and it's a good cold night to have it !! I'll try to photograph it once made.

Steamed Cabbage/Beef Rolls With Tomato Veloute Sauce

Rolls
1 cabbage head
1 pound lean ground beef
1/2 cup yellow onions, chopped
1-1/2 cups cooked rice
3 tablespoons margarine, melted
1/2 cup soft bread crumbs
1/4 teaspoon ground sage
1/4 teaspoon black pepper
1/2 teaspoon salt
1 dash ground nutmeg, optional

Sauce
4 tablespoons margarine
1/2 teaspoon chilli powder
1/2 teaspoon salt
2 tablespoons all-purpose flour
2 cups tomato juice

First:
  • Cut the core from cabbage.
  • Under running water, carefully remove about 15 leaves to use for the recipe.
  • Have about 2 quarts water boiling; add 1 teaspoon of salt.
  • Dip the cabbage leaves in boiling water, 3 at a time, for about 3 minutes.
  • Remove with tongs, drain and set aside.
  • Mix the meat, onion, cooked rice, margarine, bread crumbs, sage, pepper, nutmeg and salt.
  • Lay a cabbage leaf on a flat surface. Put 2-4 tablespoons of the mixture near the base of the leaf, fold leaf up and over the meat, turning under the sides. This will make about 15 rolls.
  • Place the rolls, seam side down, in a greased 2-quart casserole dish. Make two layers of the rolls.
  • Place this dish on rack over 2 inches of simmering water in wok or large heavy pan with rack.
  • Cover pan or wok and steam for 35-40 minutes.
MEANWHILE:
  • Melt 4 tablespoons margarine in a skillet.
  • Add the salt, chilli powder and the flour.
  • Mix to a smooth paste.
  • Cook over high heat, stirring constantly, until mixture comes to a boil.
  • Remove from heat and slowly stir in the tomato juice.
  • Return to heat and cook until it boils and thickens.
  • Serve over the steamed rolls.

It was delicious, soft and succulent. The body was only as crunchy as the panko coating it, and the legs were crispy, but again in a french fry crispy way, not a prawn shell type of way.

I've fallen in love with the fish markets all over again. They've added so much since I last saw them. There's now greengrocers, bread shops, kitchen gadget shops, wine shops... it reminds me of the Ferry Terminal markets in SFO, but more intimate.

Macaroni and cheese

... but the homemade-from-scratch kind, rather than the usual box kind :). Used the BH&G cookbook recipe, eliminated the onion (by request... I'd have kept it), and in addition to the dash of black pepper, added nutmeg, white pepper, and a sprinkling of salt.

I think it would have benefited from my usual mac & cheese extras of minced garlic and rosemary. Or at least some garlic, even if it was just a little garlic powder.

I'd been looking for a new lid to my crock pot and mentioned this to my Mom. She ended up bringing over a new crockpot for me. Thanks Mom.

I put in a little celery, some carrots, onion, frozen chicken breasts, and about 40 cloves of garlic and few red potatoes. Added some salt, pepper, rosemary and thyme and a little chicken boullion.

Cooked that while we were gone all day and come home to the most delicious smell. Yummy. Had that with some dinner rolls. The chicken was so moist and flavorful.

Which reminds me - it should be cool enough to put the leftovers away.

I think I read this on this thread somewhere... anyway, tonight's menu is tri-tip in the Crock Pot.

I didn't have any beef broth, so I used a can of chicken broth, plus several cups of water, and a package of onion soup mix. Tossed in some carrots for good measure. We'll see if it comes up something edible or if Alex is going to kill me for destroying a Harris Ranch tri-tip ;)

Morigoon - I had a recipe similar to that from The 3 Ingredient Cook Book. I think it was meat, soup mix, and water ... but the water didn't count as the third ingredient so maybe there was something else too.

It was great though - a tad bit salty - but perfect when combined with some mashed potatoes and the meat.

Dang... now I want that.

We're having, I guess, turkey burgers and corn... but I forgot to buy hamburger buns so we're using sourdough english muffins. I know it should sound good but it doesn't... mostly because I'm just not in the mood to cook anything.

Bacon wrapped asparagus sounds so yummy! Does the bacon get crispy? I must have more info.

We're having chicken teriaki with a bag of asian mix vegetables - broc, pea pods and fancy cut carrots.

While seemingly all of America indulges in such delicacies as hot dogs, potato salad, burgers fresh off the grill and such - I shall be eating out of a bag in the car, on the way to my gig. Who says being a musician isn't glamorous? :)

The boy chose his new favorite, hot dogs and mac and cheese. I think I liked it better when he didn't like mac'n'cheese!

Dinner was a Famous Star w/Cheese with a g%&d@$#!% jalapeno in it.

I called to complain, but got a constant busy signal. Apparently they don't care to hear when they've burned the mouth of an innocent bystander.

Last night my husband made a delicious dinner. His cooking ability is definately improving.

He made crock pot chili with some potato pancakes and some steamed vegies. It was sort of like a stuffed baked potato - just flat.

Tonight is chiken tacos - also from the crock pot... at least the chicken part.

We had a garlic chicken stir-fry from Trader Joe's. I highly recommend it. Comes frozen, so all I had to do was heat it up in the microwave and it's dinner! My favorite way to cook.

Tonight's dinner was a lovely Harris Ranch tri-tip, marinated for a couple hours, then hit with a spice rub, seared on the grill for a few minutes, then cooked over indirect heat till it was juicy and tender and perfect.

With buttered, grilled corn on the side :) Sadly, my stepmom does not have chili powder in her spice rack, so I had to make due with seasoned salt. Awwww, poor me.

I have recently discovered Trader Joe's and I love them! We are really fond of the orange chicken, the white meat one, and some of their frozen fried rice. I was shocked at how good it really was for frozen. The croissants are to die for. Just take them out the night before to proof and bake in the morning. The whole house smells divine and they are one the best croissants I have ever eaten!


Last night I had Frosted Flakes with a few blueberries thrown in. At least i fed the kid real food;)

Apparently I can actually fry a steak and have it turn out to be tasty, More well-done than I had intended, but not at all overcooked and not tough. Very yummy.
