Recipe idea?
 
I am looking for suggestions for sidedishes for chicken cordon bleu? I am wanting a side salad and rolls certainly- but what would work- a veggie and ?????

I would simply do brussel sprouts or green beans almondine. If you really need a second side, pureed butternut squash would be nice.

Of course, ThinKrisps would be good on that salad. ;)

I've made this before - Steamed Asparagus with Lemon

It's fast and easy. Plus you can also serve it cold which means you can do it ahead and just pull it out of the fridge.

You know, if you can somehow get your hands on some really good Brussels sprouts, it would be a good idea, but if I'm not mistaken, this isn't the best time to get them. Often, buying them from the store not on the stalk = dry, woody sprouts. Most people that don't live in Brussels sprout growing areas have only had them stale, and even some that have had them there have had their spourts overcooked (so easy to do!). I love them fresh, loathe them... err... not fresh. I have heard good things about one brand that's flash-frozen. That said, the whole "they're easy to overcook" might be a turn-off from cooking them unless you're already experienced.

And oddly, I was thinking asparagus, too. I also thought broccoli with almonds. Don't really know why. I think your side dish needs to be green.

You know, you could have regular and white asparagus with a little bacon and lemon... that could be fetching.

Roasted aspargus is so yummy and easy too. Just sprinkle with olive oil & herbs and throw in the oven for 10 minutes at 450.

If you have a Whole Foods nearby, this actually IS a good time of year for them. (Err, it is in CA, anyway.) We had them from the stalk for Thanksgiving. They were terrific.

I usually serve alfredo over noodles with my chicken cordon bleu but it is a very rich dinner. It is mighty tasty though and then add a veggie and cheese toast. Yummy
