My worry about teaching him to do that would be that it would encourage him to be chewing up much more that he shouldn't be. And if I remember correctly, that is already a problem.

You cqn't encourage bunnies to chew any more than you can encourage dogs to dig- they just either do it or they don't.

Precisely. He's gonna chew (as a matter of fact, it's important to chew to keep his teeth trimmed), so the key is to provide things he's supposed to chew on. So we already leave cardboard, magazines, phone books, and bits of junk mail around to keep his little teeth occupied.
