Recipe I had to share
 
Lashbears Uber Crunchy Oven Baked Drumsticks.

These are Tender & Succulent as anything, but are quite healthy !! (well, a bit of chicken skin, but who's counting?)

2 cups cornflake crumbs (Or Japanese Panko)
1/2 cup grated Parmesan (the dry powdery type)
2 teaspoons salt
1/2 teaspoon ground cayenne pepper
2 eggs
12 chicken drumsticks
  • Preheat oven to 325F.
  • Line a shallow roasting pan with aluminum foil. Coat with nonstick vegetable oil cooking spray.
  • Mix together cornflake crumbs, Parmesan, salt and cayenne pepper in large bowl. Lightly beat eggs in shallow glass dish.
  • Peel back the skin on each drumstick. Dip each chicken drumstick in egg; roll in cornflake crumbs to coat.
  • Roll the skin over the coating, then repeat Dip each chicken drumstick in egg; roll in cornflake crumbs to coat. Place on prepared pans.
  • Lightly coat chicken with nonstick vegetable-oil cooking spray.
  • Bake without turning, for 1 hour.

I have seen a recipe very much like this, and I love the cornflake oven baked crunch, and the Parmasian cheesy goodness! Yum!:snap:

I don't know how they make it, but it's SOOOO much crunchier than regular breadcrumbs. *Oishii Desu* !!!

I think I will try this out and use Spam instead of chicken. I will serve it over some rice

I thought it was because panko includes more sugar which aids in carmelizing and crunch. In the process of trying to confirm that I found this New York Times article about panko. A lot of detail (not only is there sweetener, Japanese-style white break apparently crumbles differently) in there.
