So, simple, so flavorful, so easy to prepare. What's not to love? I don't make it a staple by any means, but it's always a special treat.
My favorite way to eat it, other than with a greasy truck stop-esque breakfast (which I crave every so often) is when it is grilled and wrapped around shrimp or scallops. Yum!
