It has to be done at booking. I usually choose 2nd seating, because it is mainly adults, and it sucks having to come back in on a port day at 4pm to get ready for 5pm dinner. 2nd seating is usually 7:30pm.

I've had experience with both, and 2nd seating is really the way to go, especially for those who like to stay up late.

Also - to guarantee the same dining rotation, you can call DCL after booking to link your reservation with another - just need the person's last name and ressie number. DCL will make notes of it and assign accordingly.
