This lentil salad I made is pretty good (and will be even better tomorrow). Completely vegetarian and, if you left out the Bulgarian feta, vegan.
Steamed French Lentils (2 packages from TJs)
1 red pepper
1 orange pepper
1 yellow pepper
1/2 red onion
8 green onions
1/2 Japanese cucumber
6 vine-ripened tomatoes
cubed Bulgarian feta
Dressing:
Balsamic vinegar (1/4 or 1/2 cup?)
3 cloves garlic
dried thyme (handful)
dried mint (the rest of the jar)
Olive oil to top it off.
Chop up everything and put in big bowl.
Mix dressing in separate container then add to chopped ingredients
Let sit for a bit.
Eat it for days with it getting better each day.
