You've already been given plenty of great advice, so i don't have much left to add. My biggest advice really is don't be afraid to deviate from your plan. Take your time to enjoy things and if you wind up liking one park more than another, spend the time there.

Epcot is my personal favorite of the parks and I often find myself going there just to walk around and not even do any attractions. But that's just my style (and the benefit of living less than 2 hours away). I also love Animal Kingdom. It's just so beautiful, and they are finally getting it built up with enough stuff to entertain people for a longer day. I'd HIGHLY recomend the stage shows at AK. Festival of the Lion King is fantastic and I rather enjoyed the Nemo musical (but get there early if that's something you want to see. the line is insane.).

I don't dine at the parks often enough to offer any great advice there, so I'll deffer to others on that front.

Have fun, and perhaps I'll see ya around at the parks during your stay. I'm sure I'll make it over at least once during the trip to say hello to a few people.
