Did you ever wonder how eggs got associated with Easter? It seems that chickens can only lay eggs when there is 12 hours of daylight. The Spring Equinox (the first day of Spring) marked the first day that there was a full 12 hours of light. So that was the first day (prior to modern lighting techniques - candles didn't provide enough light to trick said chickens) that you could enjoy eggs after a six month absence. That and eggs being a symbol of fertility that is associated with Spring.
And I always wondered why Easter jumped all over the calendar from year to year. I found out it is the first Sunday following the first full moon after the Spring Equinox.
