Lashbears Uber Crunchy Oven Baked Drumsticks.
These are Tender & Succulent as anything, but are quite healthy !! (well, a bit of chicken skin, but who's counting?)
2 cups cornflake crumbs (Or Japanese Panko)
1/2 cup grated Parmesan (the dry powdery type)
2 teaspoons salt
1/2 teaspoon ground cayenne pepper
2 eggs
12 chicken drumsticks
- Preheat oven to 325F.
- Line a shallow roasting pan with aluminum foil. Coat with nonstick vegetable oil cooking spray.
- Mix together cornflake crumbs, Parmesan, salt and cayenne pepper in large bowl. Lightly beat eggs in shallow glass dish.
- Peel back the skin on each drumstick. Dip each chicken drumstick in egg; roll in cornflake crumbs to coat.
- Roll the skin over the coating, then repeat Dip each chicken drumstick in egg; roll in cornflake crumbs to coat. Place on prepared pans.
- Lightly coat chicken with nonstick vegetable-oil cooking spray.
- Bake without turning, for 1 hour.
