In a related note my friend in Kentucky (Dave) who just lost his Father to Cancer has invited me up to Louisville to spend some time wih him. I think I will take the offer. It just costs me 40 bucks to hop a bus and head to Louisville. He said that hte could help teach me some more things I need to know how to do so I can live independently.

Good for you for learning what you can do! I think it's awesome that your friend will help you learn even more! Cooking (and a lot of life skills) really do need to be taught. It doesn't necessarily come naturally.
I always use milk when I scramble eggs; about 1/4 to 1/2 cup for 2 eggs. I've never done them in the microwave. Cheese gets added later; it doesn't need to cook, just to melt, and will stick in the pan badly if you cook it with the eggs. Grate it and put it on the eggs after you get them on your plate.
