If the oil isn't hot enough or if the dog is left in too long, the batter will absorb oil instead of just cooking in it. Unfortunately in a high-throughput operation like the corn dog cart, new dogs will be dropped before the oil temp has recovered from the last batch. The best time to get one is probably when there's no line, so you'll get a fresh one cooked in hot oil.
