Made this for dinner:
Roasted Garlic Butternut Squash & Apple Soup
But see the prep time? 30 minutes? It took me an hour to cut and peel that stupid squash. True, I didn't have a big vegetable peeler, only a small Pampered Chef peeler. Oh, and all my knives are old and need sharpening. And my daughter and I were giggling at how lame I looked trying to cut the squash, which could have made it take longer. But the soup is delicious.
