Three cheers for the Trader Joe's demo kitchen! Today they had chicken burrito casserole. She used 4 chicken burritos (two packages from the frozen section) and poured over a jar of salsa (she said be sure not to use "fresh" salsa as it wouldn't work right in the cooking), and shredded mexican cheese blend. 25 minutes in a 350 degree oven (covered with foil). Awesome.
So I based dinner on that, but varied it. Used chicken enchiladas instead, but since they turned out to be smaller than the package would indicate, I decided to pad dinner up with some rice, so I made a mexican red rice (
a variation on this recipe), and placed that in the base of the casserole, put the enchiladas on top of that, poured over less salsa (because the enchiladas had so much sauce included), and used just straight up cheddar shreds since that's what I had.
I'll let you know how it turns out!
