Looking for a good iPod Touch note app

I'm trying to migrate from my beloved Palm Tungsten to the iPod Touch (cause there's no way in fücking hell I'm going to spend >$70/month for iPhone service.) Right now, the only thing holding me back is a lack of a decent note application. The one that comes built in is woefully inadequate. The Palm had a great built-in note app. You could categorize your notes and have it display a list of notes only in a particular category (or all of them, if you prefer.) The iTouch note app only syncs with Outlook and offers no sorting options.

A friend (and iPhone user) suggested EverNote, but that stores your notes in The Cloud and requires you to be connected to the Web to access them. That is unacceptable. I need access to my notes all the time, wireless signal or not.

Any suggestions?
