That's Fritzi Jane Courtney. I don't know if she's in the doc, but she did reprise her role as "Mrs. Taft" in Jaws: The Revenge - even reprising her "I don't think that's funny at all" line.
I do know that they interviewed islander Lee Fiero, who played Mrs. Kintner. a clip on the site has her performing from memory her big line - the reproach to Brody.
