Dinner tonight was homemade chicken soup.
I bought one of those rotisserie chickens last night for dinner, so after dinner I threw our bones into a stock pot with some mirepoix. Popped the stock in the fridge for tonight's soup. Added 2 cans of chicken broth, chopped celery, onion, and sliced frozen carrots.
I made one unfortunate mistake... overestimating the noodle capacity of the soup I'd been putting together. I threw in an entire bag of egg noodles!

So I had to add several cups of hot water (as I was out of canned chicken broth to add). Also meant that I needed more chicken, so I ended up with one of the Costco cans of chicken (Disneyphile knows what I'm talking about) plus the meat off the wings from last night's bird (we'd only eaten about half the bird).
It's quite tasty, but I wish I hadn't had to water it down quite that much as the tastiness is getting a little diluted. Still, tasty and satisfying.
