I've been to local buthers, and can't find the caul fat I need for a recipe I want to do for Thanksgiving. I only need 1 1/2 lbs. I can order a frozen 10 lb box online which will tripple the cost of the meal, but I don't really want to do that.

The recipe is a sausage and mushroom stuffed turkey breast, rolled up into a log, and wrapped in.....






You guessed it, BACON! The caul fat is used to help hold the bacon on and make a nice neat log shape. It melts away to add it's pork fat delishisness to the outside while it's browning in the pan before it goes in the oven. It's not absolutely needed, but prefered.

If anyone knows of a place in the Orange County area where I might obtain such a rare delight, please let me know. Thanks!
