I wonder if you could have given it a quick rinse to wash off some of the pepper to turn it down a notch?
Today I watched an Iron chef showdown where they show bits from past shows. This one was called "Show me the bacon". It was great, though ham and suckling pig are hardly bacon in my book. One chef made funnel cake fried in pork fat and topped it off with powdered pork fat. Mmmmm, powdered lard!
