Because you put yourself at risk. Remember, if they use the hidden immunity idol, whoever gets the second most votes goes. So anyone that is slightly insecure and thinks they might have votes coming their way would certainly want to encourage others to NOT vote for the person with the immunity idol, else they would be risking being caught in the wake. Same reason no one's risked a tied-vote since about season 4 when the deciding factor became random.
