Since it's been so hot the last couple of days, I've been attempting to make things that require absolutely NO cooking. Trader Joe's has already cooked wild and brown rice as well as seasoned cooked chicken breast. I combined both types of rice, a citrus-herb chicken, crumbled goad cheese, orange and yellow peppers, Japanese cucumbers, toasted almonds, fresh chopped ginger and sliced kumquats with a lemon ginger bottled dressing I found at TJs. I make a salad out of those ingredients then put it on top of the bagged herb greens mix (also from TJ's) and it was simply delish! We ate it two nights in a row and I didn't have to heat the kitchen at all.
I am going to try something similar with tiny black lentils (which will require a tiny bit of cooking) and other flavors (that I haven't decided upon yet).
Breakfast egg dishes and main dish salads are the two things I relally love experimenting with, and adding the challenge of no-cooking makes it interesting (for the salads at least).
Don't ask me for how much of what. I don't know. I just chop and add and see how it looks. I'm really precise about my cooking.
