CORN AND BEAN BALSAMIC SALAD
1 can organic corn
1 can organic beans
1/4 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon turmeric (or to taste)
1/2 teaspoon cumin (or to taste)
2 tablespoons chopped cilantro
salt
pepper
Drain the corn and beans but do not rinse. Combine in bowl with other ingredients and stir. Let flavors blend for at least one hour.
