				            | Wow, this is post 1950 about bacon. Love it! I just put bacon on my shopping list because I'm out. I gotta tell ya, I've been cooking up a bunch of french dishes lately. Most of them start with cooking bacon "Lardones", removing them, and cooking onion in the bacon fat and putting the lardones back in the dish. The flavor and silkiness the bacon adds is amazing. It's usually only a few slices into a big dish that also uses olive oil as the rest of the fat, so it's not all that unhealthy.
