Cut an onion into quarters or so, peeled and throw it in a hot pan with whole jalepenoes, tomatoes, whatever else (passillo, tomatillo, etc - whatever you like.) Burn everything! You want it a fairly charred. Then cut the stemmy tops off the tomatoes and peppers and throw it all in the food processor with a bunch of cilantro, lime juice and salt to taste. Yummy yummy yummy. My family is not veggie oriented - but they love this salsa. I make about 4 cups at a time and have made about 3 batches a week for the last 3 weeks. Salsa! Salsa! Salsa!
