When Lightning asks Mater how he drives backwards, Mater recommends that Lightning get a rear view mirror. Apparently the cars use the rear view mirrors too, and I guess that would include side views.

As for doors....well jeez, that's just the tip of the iceberg in a car-centric reality problem. If you pick at that loose end the whole thing will unravel

ETA - Alex, I don't think they ever manipulated objects with their doors.
