So he gets shot, there's a hole in him, THEN the coins are returned, breaking the curse, bullet hole remaining.  That's why he suddenly started to bleed.

 I'd agree with that.  Earlier in the first there is a point in time where Elizabeth uses the wheel of the ship to break the neck of an undead pirate.  Takes him a few seconds to pop it back.  If his neck was broken and then the curse is immediately lifted, he has no time to fix it.
