				            | beans n hocks prep beans as directed on the package (best to soak overnight). throw one whole quartered onion, salt, pepper, beans n hocks into the pot with enough water to cover simmer till beans are done (between 2 and 6 hours) I could live on those. veggie version: delete hock

				            | Trader Joe's has some great breaded eggplant slices.  Those, some mozzarella cheeze, plus some spaghetti sauce and you have Eggplant Parmesan. Or, if you're like me and you like to cheat (I didn't have mozzarella the other night), try using shredded cheddar and salsa. It was really good!
