I am having watermelon. Boy is eating at his dad's, which means he will come home hungry. I will figure something out for him when he gets home.
Tomorrow we will probably be having marinated, grilled chicken (love my GF grill), rice, veggie and canned biscuits. All I have to do is mention chicken and he runs to the back door to make sure she is safe. |

I've been looking at a cookbook of mine that has lots of Indian recipes. Tempting, but I waited too long to go to the grocery and I needed to do something quicker.
I had stuffed tomatoes, based loosely on the recipe I linked above. It made 4, and I might have to have seconds sometime before bed. |

We had grilled lamb sirloins, boiled new potatoes, and an arugula-strawberry-feta salad with raspberry vinaigrette dressing.

I must shamefacedly admit that gazpacho is a dish I would like much better heated up.
I've been enjoying some cheese enchiladas the last couple of days, made with red and green chilis that I ordered from Santa Fe, NM. (Where my young palate was trained) If you happen to find yourself in my neighborhood, "I be willin' to share, I be." (Caution - these ended up being pretty hot) |

Tonight I had grilled eggplant, zucchini and asparagus along with some yummy steaks. The steaks were excellent - but the eggplant put me over the top and into tastebud heaven.

I came up with a pretty good tofu meal the other night. I cubed the (firm) tofu, then made kind a peanut teryaki (soy, honey, peanut butter, sesame oil, and sesame seeds. Poured the sauce over the tofu in a baking dish, put it in the oven at 325. Cooked some rice noodles, chopped up some green onion. Once those were done, pulled the tofu out of the oven and served it over the noodles.
