I've got leftovers from two nights. I'm wondering what would happen if I combined them, threw salsa on top and casseroled it. It's an odd combo of some 50/50 chicken manicotti (half has alfredo sauce and half spaghetti sauce) with a little leftover filling I made into meatballs and then last night we had homemade boston baked beans. So, what would happen if I chop up the pasta/meatballs, mix it with the beans and a little salsa and.... crush up some tortilla chips on top and bake it?

It's either mad genius or we can always have canned soup. We'll see if I get brave enough to play The Mad Scientist with Leftovers Game.

Had fresh corn for lunch on Sunday with my new favorite compound butter, butter, garlic and sriracha sauce. OMG, it was a marriage made in heaven. I'm craving it now.

Alternately, fresh corn with chimichurri sauce and butter. delish!
