I think I'm steaming up crab legs tonight, so this is probably a 2-salad day.

Tonight's bill of fare is trout with a lemon/butter/caper sauce and veggie or salad.

I made this for dinner. Easy and scrumptious!

Easy Chicken Parmesan

1/3 cup extra-virgin olive oil
2 large garlic cloves, pressed
1/2 teaspoon salt
1 teaspoon dried oregano
Large pinch of red pepper
4 skinless boneless chicken breast halves (about 6 ounces each)
1/2 cup finely grated Parmesan cheese
6 ounces fresh mozzarella, thinly sliced

Preheat oven to 500° F. Whisk first 3 ingredients in large bowl. Mix in the oregano and crushed red pepper. Coat chicken with garlic oil mixture.
Place 1 cup Parmesan in pie dish. Dip 1 side of each chicken piece into cheese to coat; arrange chicken, cheese side up, on a large rimmed baking sheet or in a glass baking dish.
Roast chicken until just cooked through and firm to touch, about 10 minutes. Arrange mozzarella slices atop chicken. Return to oven; roast until cheese melts, 1 to 2 minutes.

I served it with brown rice and a spinach, feta, and walnut salad with raspberry vinagrette.

Interesting - that's gotta up the healthy quotient to boot.

Last night no one felt like cooking, and neither of us wanted fast food, so we picked up a rotisserie chicken from the local grocer, a garlic loaf (the kind with garlic cloves in it... not the buttery, goo-ey kind) and I paired it up with some smoked gouda... *le sigh*

Tonight, I think it'll be leftover pork loin with salad.

I made sausage biscuits with a fried egg on them. Breakfast sandwich for dinner. It was quick and something the whole family will eat. Not that it's very healthy but-whatever.
