There's a short interview with Mark Hamill from last year, when rumors about that clip were circulating. He claims he has no recollection of filming that scene. But he also points out that other scenes (he gives the example of the scene in Empire when his hand is rebuilt) were shot in post without him, using someone as a double. Notice that you never see Luke's face clearly in that clip...
