Actually had a home-cooked meal last night. Which is nice as it is a rarity. Usually, I get so busy at work that I don't eat lunch until 2-3 which precludes the need for dinner. Since things got so busy at work yesterday I never even had lunch, so dinner was needed.

Heading to the store right now to pick up a few items I need for a new concoction I'm trying this evening. Au Gratin Beef Bake....we love comfort food!

I'm thinking Carnation Cafe potato soup on this cold dreary day. I just need to pick up a few items and I'll pretend to be Chef Oscar!

Tonight I roast a turkey! Which of course means it goes in the oven in about 2 hours. Been brining in the fridge for a couple days.

When I was a child, we called them Toad In The Hole (Not to be confused with the British sausage in batter dish)

I thought it was Chef Mike Hugo who came up with that?

Now I want to make that for dinner.

I stand corrected, it was Chef Mike Hugo. I guess I just associate everything that comes out of Carnation as Chef Oscars creation. It is a wonderful soup though!

I didn't feel well yesterday so I didn't make it anyway. We went out for pizza instead.

On Monday I broiled a tri tip with a very simple salt, pepper, and cinnamon rub. I served it with a roasted red pepper (roasted myself), sauteed mushroom, cilantro puree that came out almost perfectly (went a little heavy on the garlic that I threw in last minute). Side was simple matchsticked italian squash (green and yellow) sauteed with salt and pepper, al dente, and the remainder of the mushrooms that didn't make it into the puree.

All in all a good result for something I thought of while wandering the supermarket ailes. I was mostly just pleased that the puree ended up flavorful, with the roasted peppers really coming through.

Standard Dinner #3:

Pork Chops browned in a large frying pan. Add 1 Cup rice, two cans spicy v8, 1/2 cup water, simmer for 20-30min.

One meal, one pan is my motto.
