Finally broke out the deep fryer and mandoline tonight to make fresh potato chips. We ended up with three different flavors - Bacon, Garlic, and Old Bay. They are soooooooooo beyond good!

Bacon and Garlic I am familiar with. But what does "Old Bay" taste like...?

Old Bay's a seasoning salt. Here's the ingredient list: CELERY SALT (SALT, CELERY SEED), SPICES (INCLUDING MUSTARD, RED PEPPER, BLACK PEPPER, BAY [LAUREL] LEAVES, CLOVES, ALLSPICE [PIMENTO], GINGER, MACE, CARDAMOM, CINNAMON) AND PAPRIKA.

It's used is seafood boils (you know crayfish) and it is used in Maryland (right Moonie) in crabcakes a whole lot.

In Moonie's honor, I will rename my Old Bay chips as the "Bitter East Coaster" variety.

I went a little too crazy on the Garlic ones though - they nearly put hair on MY chest.

I think the key to the chips was the mandoline. It allowed for perfectly even wafer thin slices.

However, the downside to all this, is that our place still smells like oil. I feel like I'm living in McD's. Bleh!
