"Bleed" is additional image that extends beyond the trimmed edge. By printing this extra 1/8" of image, it allows for minor movement tolerances in post-press cutting. What Snowflake was referring to ("The text runs a bit too close to the bleed area on the top and bottom...") was keeping live copy away from the trim. That's a much better explanation then what I'd typed out, erased, and linked to. Funny - I use it all the time - but trying to explain it clearly without showing a picture of it - well - I got pretty wordy.
